Meet the Maker of Hysope Tonic Water

MEET THE MAKER: MERIADEC BUCHMULLER 

In 2014, Mériadec decided to leave his job in strategy consulting to enter a sector with which he is particularly fond: gastronomy. He followed his dream of becoming a grand cru spice merchant and hitchhiked from Paris to Sri Lanka for six months to source cinnamon, vanilla, saffron, cardamom and pepper.

On his return, he sold samples to the Pierre Hermé Group and to the kitchens of the Grande Epicerie. But he soon realized that doing it alone was too much of a hassle. The desire to be an entrepreneur did not leave him for the next four years, but he set aside the world of gastronomy for a while... until the beginning of 2019, when learned that the mixology market also demanded premium, French, organic products. He researched the demands of bartenders and realized that their need was not in spices but in premium mixers. 

Therefore, with great effort and determination to offer a range of mixers other than those available from Anglo-Saxon companies, Mériadec launched HYSOPE in March of 2019. He met a formulator with whom he validated five recipes, after having tested hundreds of aromas from the know-how of the flavorists and perfumers of Grasse, the perfume capital of the world.

Production is done in the heart of the Charente, where before HYSOPE, the great names of French spirits found their letters of nobility. Today, HYSOPE products are distributed throughout France and Mériadec's dream is to have his own vats and complete production line.

Everything is done to promote a unique French know-how (a perfumer's know-how). HYSOPE organic tonics reveal a long-lasting bitterness, close to that produced by cinchona, and a delicious balance between the distillation of plants and a controlled sweetness. The choice of a purely French product has also influenced the use of gentian (a bitter and typically French flower) as the basic aroma in the composition of all the tonic recipes. 

The elderflower brings a very subtle and herbaceous sweetness to the Fleur de Sureau tonic. A perfect serve with spritz, gin, or cognac, the elderflower reveals white flower scents, honeyed touches, and a long-lasting softness in the mouth.
